This recipe has been a staple in our family for quite some time. We would always buy an over-ambitious number of bananas and soon find them going ripe before we had a chance to polish them off. This, of course, was no disappointment because it meant it was time to whip up another batch of delicious banana bread.
This banana bread is a little different than other recipes you may have tried though because it contains a 1/2 cup of Organic Pumpkin Seed Oil and a 1/4 cup of Organic Pumpkin Seed Powder. These 2 ingredients provide copious amounts of essential fatty acids like omega-3 and 6, as well as important nutrients like Magnesium, Potassium, Phosphorus, Tryptophan, Zinc, and vitamins A, B, and C. I don't know about you but that sounds like a lot of health benefits for something as indulgent as banana bread, and because of the pumpkin seed protein powder it makes a great protein-rich breakfast booster.
So if you've failed yet again to finish off the pile of bananas sitting on your counter top we encourage you to give this recipe a try and fall in love with one of these light & fluffy, perfectly sweetened, little slices of heaven.
Ingredients:
Dry ingredients:
• 1-3/4 c. All-purpose flour
• 1/4 c. Organic Pumpkin Seed Powder
• 1-1/2 tsp. Baking powder
• 1/2 tsp. Baking soda
• 1/2 tsp. Cinnamon
• 1/4 tsp. Salt
• 1/8 tsp. Nutmeg
Wet ingredients:
• 1-1/2 c. Mashed ripe bananas (5-6 whole bananas)
• 2 Large eggs
• 1 c. Sugar
• ½ c. Organic Pumpkin Seed Oil
Directions:
Preheat the oven to 350°
Start by adding all your dry ingredients to a medium-sized bowl and stirring to combine.
Next, get out a small bowl or a glass measuring cup and mash up 5-6 ripe bananas to get the 1-1/2 cups needed for the recipe. Small lumps are O.K. and If it's a little over or under 1-1/2 cups it's no big deal. Add the remaining wet ingredients to a large bowl and whisk together with the mashed bananas.
Slowly incorporate the flour mixture, stirring as you go until everything's well blended. Butter a loaf pan and pour your mixture in. Pop in the oven and bake for 55-60 minutes. Poke the center with a toothpick and make sure it comes out clean. Pull it out and leave it to cool for at least 30 minutes. Once it's cooled, Run a butter knife around the edges, tip it upside down, and tap the bottom to remove it from the pan. Slice and serve warm.
